1Tbspplant milkI typically use unsweetened soy milk
1Medjool date, pitted
1 Tbspcacao nibs, lightly sweetenedoptional, for garnish
Instructions
Prepare your mise en place
Be sure you have frozen ripe bananas and all other ingredients for this recipe. You may choose to measure each ingredient out into separate bowls (preparing your mise en place) or you may just choose to measure each ingredient (not including the optional cacao nibs) right into your blender.
Place ingredients into the blender
All of the ingredients can go into the blender (except the cacao nibs, if using). I typically start with the soy milk first, but otherwise, the order of ingredients doesn't make much difference here.
Blend until creamy smooth
I highly recommend using a high-speed blender to prepare nice cream though I have heard that others have had great success using a food processor. If using a Vitamix, you'll want to turn the speed up to high and use the tamper for this. It just takes a minute or two of blending and tampering until it's nice and creamy smooth. Be sure not to over-blend as the nice cream will become soupy!
Choose how you would like to serve, and enjoy!
The cinnamon bun nice cream is ready to enjoy in its soft-serve state. Just pour/scoop the nice cream into two small bowls and enjoy! ...OR, you can serve it ice cream scoop style. Just pour the nice cream out of the blender and into a separate container and place the container in the freezer. After about an hour, the nice cream will be scoopable with an ice cream scoop.
