4Medjool dates, pitted & any dried flower parts removed
2teaspoonsgolden flax meal
½teaspoonbaking powder
½teaspoonbaking soda
1teaspoonpure vanilla extract
1 ¼cupswater
½cupaquafaba(brine from a can of chickpeas)
1tablespoonapple cider vinegar
Instructions
Preheat a nonstick waffle maker to a medium browning setting. For instance, I set my waffle maker to heat setting #3 (out of 6).
Add all ingredients (except the apple cider vinegar) to a blender in the order listed and blend for one minute. Then, add the apple cider vinegar and blend for one minute more or until smooth.
Next, be sure your waffle maker is preheated well before pouring in the batter. Otherwise, follow the instructions for your particular waffle maker. In my waffle maker, these waffles always come right out without sticking (even without using any oil) but some waffle makers may require a heat or timing adjustment or even a light spray of oil. I've also found that opening the lid too soon may cause the waffles to separate top to bottom. In general, leaving the waffles alone (without peeking) for a bit longer than you may expect works well.
Once ready, remove from the waffle maker and top your waffles as desired. I like adding a little maple syrup or a tasty fruit puree with or without additional fruit such as bananas and berries. Enjoy!
