What inspires me?
Over my 20+ years of experience in cardiovascular nursing, it's been difficult to watch how the Standard American Diet (SAD) and other poor lifestyle choices have been affecting people's health. As each year goes by, I continue to see more and more people developing life-altering chronic diseases and conditions at younger and younger ages.
I couldn't just simply stand by and watch.
These lifestyle-related conditions are things like high blood pressure, heart disease, diabetes, obesity, kidney disease, auto-immune diseases, and some types of cancers. I couldn't just simply stand by and watch. I knew there just had to be something more we could do.
Side note: Please don't get me wrong...pills and procedures are absolutely necessary in many instances. However, they simply don't treat the root cause of these diseases.
...but there's good news!
Through Lifestyle Medicine, we can dramatically improve our overall health and reverse this trend!
An insatiable desire to learn more...
How could I help improve the health of my patients, my family, myself, and beyond? With an insatiable desire to learn more, I became a member of the American College of Lifestyle Medicine (ACLM) in early 2018. In early 2019, I earned a Certificate in Plant-based Nutrition through eCornell. Later the same year, I obtained Board Certification in Lifestyle Medicine through ACLM. I also completed the Plant-based Professional Cooking Certification course through Rouxbe.com in the Summer of 2020.
Then, in 2022, I obtained certification as a Board Certified Nurse Coach! Please see my CircleWellnessCoaching.com website for more information!
I also continue to learn by listening to podcasts, watching documentaries, reading articles, attending conferences, and last but not least: trying out and creating new recipes (I'm a bit of a plant-based foodie at heart ;-)).
Why Green Circle Kitchen?
I've created Green Circle Kitchen to share this life-saving knowledge with you, your friends, and your loved ones.
- Green as in life and plant-foods.
- Circle as in sharing within this blog community as well as improving lives throughout the world.
- Last but not least, the Kitchen is the heart of the home where what we choose to cook can make the greatest impact on our health and the health of our planet.
As you explore and try new plant-based recipes here, I hope you're inspired to share them with your circle of friends and family. One meal at a time, three times a day, 365 days a year...together, we can make a difference.
My personal path to WFPB
I've been following a plant-based lifestyle (which has been predominantly Whole Food Plant-Based) myself since August 2017. I've thoroughly enjoyed maintaining and improving my health this way. Within a year or two after I became plant-based, the majority of my close family joined me. They've all seen improvements in their health following this lifestyle as well.
The WFPB lifestyle has been truly freeing!
I've certainly followed the paths of many dietary approaches (you name it, I've probably tried it). After years of yo-yo dieting, following a WFPB lifestyle has been truly freeing for me! With WFPB eating, instead of having to subject myself to complex calorie counting or macronutrient balancing, a WFPB diet is just so simple! All I need to do is choose a plentiful variety of tasty and delicious whole plant-foods!
I actually feel like my food choices have expanded!
I don't feel deprived in any way
With so many beautiful, colorful, and tasty plant foods to explore, I also don't feel deprived in any way whatsoever. Believe it or not, I actually feel like my food choices have expanded! It's been thoroughly enjoyable and I'm thankful to know that a low-fat WFPB lifestyle is proven, by non-industry funded science, to prevent and sometimes even reverse chronic disease!
