Summer in a bottle!
This oil-free Simple Summertime Salad Dressing recipe is like Summer in a bottle! π
This recipe came about when I was throwing supper together for my family one evening and I wanted to add a simple side of fresh greens. I've been wanting to add more greens because of their vast health benefits. For more information about the health benefits of greens, see this book by Dr. Caldwell Esselstyn, "Prevent and Reverse Heart Disease."
On a whim, I decided to whisk this bright and light combination of dressing ingredients together. As it turned out, we were all very pleased with the flavor. We liked it a lot! π
This recipe was definitely going to be a "keeper" right away. So, of course, we had to give it a name. My youngest daughter said it "tastes like summer!" Yes, that's it! So true! The flavor is very bright and cheery, reminding us of fun times outside on a sunny summer day. That's where the name "Simple Summertime Salad Dressing" was born. π
So very easy!
This recipe is so very easy to whip together at a moment's notice. There are only 3 ingredients & you can have this dressing ready in 5 minutes or less.
- ΒΌ cup aged white balsamic vinegar
- 2 tsp dijon mustard
- 4 tsp pure maple syrup
Simply whisk!
Combine the ingredients in a small bowl and simply whisk them together until well combined. Alternatively, you could add all of the ingredients to a well-sealed jar and shake to combine. This takes about a minute, maybe less. It's so easy! π
Be sure to go light
When drizzling this dressing over your salad, be sure to go light with the quantity of dressing to start out. I like to just drizzle a small amount of the dressing over my greens and toss to coat the leaves lightly. This Simple Summertime Salad Dressing is very bright and flavorful so a little bit of the dressing goes a very long way.
Actually, one time, when I was rushing more than usual to throw a dinner together one evening, I grabbed our white wine vinegar instead of the white balsamic when preparing this dressing. I'd say it does work so-so in a pinch, but the flavor was a bit too acidic for my taste. I do prefer the ever so slight added sweetness and complex flavor of the aged white balsamic in this recipe.

Simple Summertime Salad Dressing
Ingredients
Simple 3-Ingredient Summertime Salad Dressing
- ΒΌ cup aged white balsamic vinegar
- 2 tsp dijon mustard
- 4 tsp pure maple syrup
Instructions
- Simply whisk the three ingredients together in a small bowl for about a minute until well combined.
- Drizzle very lightly over your choice of salad greens and/or toppings & toss to combine. The greens should be just lightly coated with this bright & flavorful dressing.
- Store the dressing in a tightly sealed container in the refrigerator.

Hi Donna--this sounds delicious !! But my aged Balsamic Vinegar is the dark one from "'The Oilerie." Can I use that one in this recipe? Thanks, Chef Donna !!π

Thank you for your comment, Sherry! π Using aged balsamic vinegar instead of white balsamic vinegar would make it a different recipe. However, I would think it would be worth a try! The aged balsamic may be slightly sweeter & the color of the dressing would be a lot darker, so keep those things in mind depending on what you're planning to use it with. The "white balsamic vinegar" I used in this recipe is actually from the Oilerie, too! It's fantastic!
